When Nick has a weekend off, it’s kind of a big deal. Usually on the weekends when he works, my breakfast consists of cereal and a piece of fruit, nothing that exciting. Whenever he’s home though, we try to make something extra special. As good as going out to brunch sounds, it’s nice to be able to sleep in, spend a relaxing morning together and indulge in something that we make together. I usually reserve brunch dates for my girlfriends when he has to work. I feel like brunch is definitely a girls thing, isn’t it? At least for us, that’s what I tell myself – he’s not a big brunch fan.

I came across this recipe for baked egg boats over at Spoon Fork Bacon and knew we had to try them! We had left over baguette from the night before so it was the perfect thing to make. We made our own version, with onions, proscuitto and mozzarella, but honestly anything you throw in there I’m sure would be delicious.

What about you, do you enjoy making breakfast or going out on the weekends? I’m a big fan of both, depending on the occasion. There are so many great spots to try here in Chicago (especially when there are bloody mary’s involved)!

    Those look delicious! My husband also works quite a few weekends, and when he’s home we do the same…a nice breakfast spread and a leisurely morning. I usually do quick breakfasts and run errands when I’m on my own, so it makes a nice change to share a morning meal.

    Hi Jen! Now my mouth is drooling! I’m the same as you, when you my fiance is working, I’m usually eating a waffle or yogurt, but when he’s home we go all out on breakfast! We will have to make this!
